I have been working out now for about 15 weeks and running everyday for about a year. I have seen big changes in a short time but have not really change my eating habits. Mostly because I don't really know where to start. So, if any one has any ideas I would like to hear them. I understand the basics - 6 or so small meals day ect... I guess what I need to know is for a 3100 cal day what are some meals? How much in should portion size be? Is 3100 cal per day to much if your trying to lose wieght.

First off...congrats on the quittibng smoking. Not knowing your height and weight it is hard to say much about the calories.
You should be getting 1-2 grams of protein per pound of body weight. So thats 4 cal per gram.
Carbs should be about the same at 4 cal per gram, or cut back some if you want to lean out.
And fat content should be around 30% of the total calories., at 9 cal per gram.

We must become the change we want to see.
