Made this last night and Noirutla ate it like a pig! LOL! No recipe really, I just sort of made it up as I went along.
I put a tad olive oil in a deep hot skillet, added 1lb ground turkey that I had seasoned with coarse ground black pepper, red pepper flakes, salt, garlic, cumin, and a pinch of corriander. Once the turkey was almost done, I added a can of Ro-tel. If you don't know what that is, it's with the cans of diced tomatoes...it's tomatoes and chili peppers diced together. Added 1/2 can drained kidney beans and 1/2 cup brown rice with just enough water for the rice to absorb all liquid in the pan. Once the rice was done, I tasted it. Wasn't spicy enough for me, so I added more red pepper flakes. LOL!
It was pretty good. If there is anything in there I shouldn't have eaten, please let me know so I can substitute it out for something healthier.

Canned tomatoes MIGHT have lotsa sodium in them...and also kidney beans can sometimes be canned in substances which may not be that great, but I didn't see anything that was particularly bad for you...Maybe try fresh tomatoes, chili peppers and beans instead??

Keep 'em coming....I LOVE turkey....the best part of thanksgiving <smile> besides, of course, being with my family.
Spicy food too....Love Thai food....Wish I could find a way to make Pad Thai w/o the rice noodles :o) or curry w/o coconut cream ..can't imagine how that would taste though..eek :o)

I'd have LOVED to have put fresh tomatos and jalapenos in it instead. I was out and didn't realize it until I was part way through fixing it. LOL!
I need a bigger kitchen!! LOL! It's hard to fix everything with fresh ingredients with no countertop space. But it's all good. :)
It will be about 6 meals once it's all fixed.

LOL....I'm with you on the kitchen..Kev and I try to cook together quite often...Almost impossible to do....Once you stock up on the staples in my kitchen, there's not much room for anything else <smile> Absolutely no counter or cabinet space....But the lack of cabinet space might just have something to do with my gardening supplies that have found their way into the kitchen :o)
Oh well <shrugs> I could use the Miracle-Gro :o)

That sounds really tasty. Do you weigh and measure everything for carb/cal/pro/fat content beforehand and add it all up or do you just guess? Cooking from scratch like this is what takes up all my time when I have to figure all of that out. Have you been doing this so long that you sort of know already?

When I did this, I simply threw stuff in until it tasted good. I tend to work in 1/2 cup measurements naturally. It fits into all of my containers to scoop out, and I have a couple extra 1/2 cup scoops that are strays from some long lost set of measuring cups. :) As for spices, I don't ever measure them...not even with a recipe. I put a little in and keep adding and tasting in between until it's where my mouth likes it. :p
