99% lean burger = DRY

Anybody have ideas on how to make lean ground meat less dry and have a little more "substance"?

All suggestions are appreciated!

Put some salsa on it and if you grind the meat yourself you don't have to cook it as much. You can have it medium like a steak, then it is not so dry.

Thanks for the suggestion. What I actually ended up doing was cutting up onions and peppers and mixing them in the turkey, along with a little shredded fat free cheese..worked perfect. They were really good

If you are just wanting the ground turkey, I put half cup water in the pan and cook it that way. It comes out moist. You can make patties that way and chop it up in the water and cook it, drain off the excess water when you are done, you will be surprized to see the fat that is in it go right down the drain.

cool Sandy, thanks. This was actually 99% lean so I wasn't worried about the fat. Good suggestion though. I used the foreman and that really sucks out the moisure.

What about Worcestershire? They even have one for chicken/white meat now.

I use fat free herb dressing when I use super lean meats. It adds some kind of kick without adding anything you don't want. I also makes a great marinade for eye of round, the king of tough steaks.

I doubt if I'll be eating any steaks anytime soon! but thanks for the tip...those herb dressings work pretty good. Worcestershire is good but it's so salty!

I bet if you took some of that herb dressing and put it in the pan you are cooking your lean burger in, it would be real tasty. MMMMMMMM, gonna try it, yesterday I put homemade salsa in the pan I was cooking a lean ground turkey in and it was really tasty.
