The breasts are chicken’s,
The stuffing is “Spinachk” and Olive Oil, The Sailor is Popeye (So sorry!). Decided to try something new. If you hate breasts, give these a try. If you love breasts, give these a try. They are so good, I have been eating 2 breasts per meal (sorry again). (1) Bag o’ Breasts (3-5 pound bag, usually I get them on sale) (2) Bag o’ Spinach (Fresh, frozen, who cares!) (3) A couple ounces of cheese (I like Muenster) – OPTIONAL of course. Low fat? Low carb? Have at it! (4) Olive Oil (Lightly coat the bottom of a pan). (5) Garlic, hot pepper flakes, and whatever spices you have (I use onion powder, salt, pepper, Oregano, etc.) Step 1: Coat your breasts with spices. Step 2: Bake your breasts. Step 3: Flash fry the spinach in olive oil, garlic, hot pepper flakes – Fry for just a minute or two, then let cool. Step 4: After your breasts are cooked, let them set for a while (10 minutes) to seal in the juices. Step 5: Slice a pocket in each breast, stuff with the spinach mixture, and add a couple slivers of shredded cheese. Step 6: Store each stuffed breast in a small sandwich bag. Step 7: Refrigerate the breasts you’ll eat soon, freeze the others. Step 8: Eat them breasts, baby! Not a lot to these – pretty straight forward recipe, but man are they good. The trick is the stuffing. The spinach keeps the breasts really moist and adds a great flavor. I could eat nothing but these breasts! In fact, Mrs. TSMD even likes my breasts, and she is not a breast-loving person! Re: the “Popeye” reference, I suppose you Popeye purists could add “Sweet Peas” to the stuffing to go with the Olive Oil and “Spinachk”, but I think the overall taste would suffer. Granted, the humor aspect would be more complete I suppose, but, hey, cooking and nutrition should not be too funny. TSMD |

Those look really good! I'll have to try them next time we have chicken breasts on hand. I've been eating chicken thighs lately, they were on sale ...

I made an abbreviated version of this on my George Foreman grill last night - just microwaved the spinach, mixed in some feta cheese and stuffed the chicken, then salted and peppered the chicken and cooked it on the Foreman grill so total prep/cooking time was around fifteen minutes. I'm sure it's better with all the extra spices but for a fifteen minute Foreman grill meal it was pretty darn good.
I love broccoli so I'm thinking a broc stuffing might be good, too - am I crazy? |

Okay, tried the broc stuffing and it was just as good as the spinach - if not better - only thing is, I'd really love to put cheddar cheese in here but I'm watching my fats pretty closely right now I had to stick w/ a stronger, lower fat cheese. I used feta (wow I'm getting sick of feta LOL) and ate the chicken the next day cold out of the fridge and it was still good. But I 'magine w/ cheddar cheese and maybe some garlic and breadcrumbs it would be really fabulous. *sniff*

I like the feta and broccoli stuffing idea, JessicaR. Think I'll give it a try. Maybe I'll throw caution to the wind and throw on the cheddar and bread crumbs, too (sorry!). I've got a couple weeks before I go on my 6-month super cutting diet! Thanks for the variation idea!

You don't miss a trick, do you! No fair reading the other posts! Besides, AZ turned the herring and buttermilk into a seafood crepe with a white sauce - AND it was for breakfast! So there! The chicken and broccoli would be a dinner meal. Man, I'm gonna have a tough time with this "no cheating" diet... especially with all these "eyes" watching my every move (and word).LOL TSMD |

Thanks for the recipe TSMD.
I made it for a group of friends and modified it a bit. I grilled the chicken and mixed some portabells mushrooms with the spinach and spices. They raved and I didn't even add cheese. |

Hey AZ - there ain't no calories in halucinations! Besides, it's religion where you just think about a sin and you're guilty! With this new diet, daydream all you want! I can imagine I'm in Saxman's happy place (complete with abs - it's my halucination, dammit!) enjoying all kinds of guilty pleasures - as I'm actually choking down each 1/2 cup of cottage cheese! Mind over matter! I know it's a stretch, but I'm using every method at my disposal to ensure that I succeed at this.
In fact, during this final week of eating freedom (ahem!), I'm mentally setting the stage for my "happy place" - I know I'll need to go there. Hopefully, not too often, though. TSMD |

Salsa sounds like it might make it almost palatable, AZ... but unfortunately salsa is not in my program. The only way I'm going to succeed at this is to stick to it TO THE LETTER! After my 6 months are over, a bland diet will really be a treat for me! Thanks for the encouragement, though!

Ok, finally got around to making these. I used fresh spinach, and a combination of mozz and cheddar cheeses, both fat free. i know its been too long but emm i tried this with my own stuffying... chopped tomato and apricot with a dash of onion powder and few drops lemon juice ...had it hot ...and well it turned out great :big_smile: cool breasts saxman :p
