Last night I whipped together a squash hotdish recipe that's certainly nothing fancy but i'll share anyways...
you'll need...
1 acorn squash
2 tiny yellow squash
1 zuchinni
1 sweet potato
a handful baby red potatos
a handful baby pearl onions
1 red bell pepper
2 tblspoons olive oil
2 tblspoons balsamic vineger
rosemary and thyme to taste
basically... i stuck them all in a coverered casserole, and cooked at 500 degrees for 45 minutes...
it was delicious!

Sounds good, But I still like to eat my yellow squash and zuchinni raw. I am going to add this one to my recipe book to try when I am off this diet. Thanks!

What kind of diet is this bad for? I am trying to lose fat, I ate about a cup of that concoction last night at dinner. I hope it wasn't a bad thing...

It sounds like a really good thing it is just that right now I am getting my fats from Flaxseeds and I am staying away from Pot. completly right now. That's just me though, I am even just eating my chicken breast right now by boiling it in water to remove any excess fat. Then I grill it on my George Forman with spicies. Tara it isn't a bad thing, just depends on what you choose to have on your diet.

It sounds really good, and colorful. I am getting so sick of green food...lol. Tonight I am grilling shrimp, red peppers, mushrooms and onions....nothing green!
