Diehard dieters might want to skip this one, but like most it can be changed around to fit your needs. I don't feel as guilty if I am also getting some protein with my goodies. And there is no sugar added so I think most diabetics can eat them. I took some to my dad for Father's Day as he is off sugar, but always likes a 'little smackerel of something'…lol . These are good for Sunday morning with your coffee.
Oatmeal & Fruit Cookies
1c uncooked oats
1/2 to 1c raisins or other dried fruit (I used cherry flavored craisins)
3 scoops vanilla flavored protein powder (could use more or less)
1/2 to 1c shredded coconut
1/4c nuts (optional) (I used sliced almonds)
3 egg whites
1t vanilla
1 ripe banana, mashed
1-2T honey (optional)
nonstick cooking spray
Mix dry ingredients in one bowl and wet in another, then mix together. Spray baking sheet with nonstick cooking spray (or use parchment paper) and scoop rounded spoonfuls of dough onto it. Bake 15 minutes at 350 degrees. Makes 24 small (teaspoon) or 12 large (tablespoon) cookies.
I used the lesser amount of the things listed and ended up with 9g carbs, 66 cals, 4g pro, 2g fat for 24 small cookies and double that for 12 lg. I will probably add another egg white and another scoop of powder next time.
