1 cup of low fat cottage cheese
1 scoop protein powder (Vanilla)
1 cap full of coconut extract
1 cap full of vanilla extract
1 1/2 teaspoons of Udo's oil
2 tablespoons brown sugar
3/4 cup of strawberries (I used thawed ones) (you could use blueberries instead if you want)
Mix first 6 ingredients with a hand blender until very smooth. Spread out in a shallow dish. Put fruit on top.
set in the fridge for about 30-60 minutes to get cold
at first glance protein looks high, fat looks good (UDO's) and only carbs are from fruit.
