When and how often to eat

I'm a relative beginner in weight training. My goal is to tone up and gradually build some muscle mass. I work out after work around 6 or 7. How often should I eat and how long before or after should I eat? And what kind of supplements would be good for my goal and when do I take the supplements. Thanks for helping out a beginner.
