well, maybe it isn't cold season yet, but I caught a cold and have been doctoring up chicken soup with rice all week to make it healthier and tastier, so i thought I would share, just in case anyone needs some comfort food.
Hot and Sour chicken soup with shrimp
1 family size can of Campbells Chicken soup with rice
1 packet of Hot and sour soup mix (ethnic food aisle at grocery store)
1/2 bag frozen shrimp (or fresh, but frozen is cheaper, especially when on sale!)
Hot chili sauce
garlic, 2-3 cloves to taste, crushed
Make soup according to directions, when it is hot blend in the hit and sour seasoning, press in the garlic and drop in the shrimp, simmer until the shrimp turns pink and is done through, add as much hot sauce as desired.
Snuggle up under a blankie on the couch and watch bad daytime telly while you enjoy this spicy soup!
Curried Chicken Soup with Rice
1 Family size can Campbells Chicken Soup with Rice
1 cup leftover chicken breast, diced (or more if desired)
1 sweet potato, diced
2-3 TBSP curry powder
1 can lite coconut milk
1 small potato, diced (optional)
Hot chili sauce, to taste
fresh cilantro, to taste
Empty condensed soup into a large pot. Pour coconut milk into soup can and add enough water to fill can, add to pot.
Add diced sweet potato, potato (if desired), and curry powder. Blend powder in with whisk. Simmer 10 - 15 minutes, til potatoes are soft. Add chicken and hot sauce to taste, simmer 5 minutes to heat chicken through.
Serve topped with fresh cilantro. Enjoy!
Okay, these are not low-cal, but they are full of good ingredients and spicy enough to clear out your sinuses! Plus chicken broth has been proven in studies to help decongest your nasal passages!!
