Chili if made correctly is a great food, especially if you are on a gain. The beans are gret complex carbs high in fiber, and if made with ground turkey, bison, or at the very worst ground round, any other meat than regular ground beef, it is a very nutritious high protein meal.

Waht about potato pancakes?

2 cups mashed potatos
2 eggs
enough flour to make 'em stay together
1 medium onion

Only thing with this is I always cook them in bacon grease, should I maybe switch to somehting else?

Try using mashed sweet potatoes and brown rice flour or whole wheat flour. That would make it better for you.

And yes, use Pam for no added calories or olive oil if you have to have oil.
