What about potato pancakes?

How good is this for you and is it a good post workout meal?

2 cups mashed potatos
2 eggs
1 medium onion
enough flour to keep 'em together

I have always cooked these in bacon grease...i guess thats bad right, what do you recommend?

Correction to this post, meant to say as a pre-workout meal.

Also what else might be good to add to this on the side as for as rounding it out goes?

Your best pre workout meal will consist of some complex, slow digesting carbs and some good proteins. You need sustained energy to endure a prolonged heavy workout. Simple carbs will not do this alone. You also want protein as to have amino acids available while working out.
