If i work out late at night, should i still mix my protein with maltose and dextrin? Arent they loaded with carbs and arent carbs bad for you late at night? if i should, how much of each should i include?

Yes too many carbs are bad for you late at night, but you'll need some sugar after your training (or it'll take you A LOT longer time to recover after the work out).
What are your goals?

You have to eat post workout anyway. The post workout shake that I make (as suggested by bb1) protien-malto-dextrose breaks down this way. Protein 44 grams (6 gr. carbs)-240 calories, Maltose 21 grams-105 calories, Dextrose 20 grams-75 calories for a total of 420 calories (204 from carbs) I believe the positive outweighs the negative.

Yes, the above posts are right on. You will always need to have a recovery shake. The last thing you want to do is go to bed in a catabolic state. Reduce your quantities in half, but have a shake. Then try to have a meal of protein and fats before bed, this will serve for recovery and not impede any fat burning you may have achieved through your workout.
