Hey everyone! I'm new here and I'm just trying to get my Nutrition Program down. It's all a little confusing, though, because being a freshman in college, I am required to take out a meal plan with the college, which means I have to eat what they give me. Any suggestions as to what I should to about that? This is what they serve:

It's a lot of stuff to read, but basically, they SAY they have variety, but I don't think they do. Usually, they just have fatty foods like fries and other things. I am a vegetarian as well, and the only non-veggie stuff that they have are french fries, salad, veggies, pasta and veggie burgers.
Do you think I should stop going to the cafeteria and just buy my food from the local markets? You can't cook in your room, though, so...

The list included a fairly good selection of choice
do you eat eggs ? go for the soft or hard cooked and only eat 1 yolk per 4 whites. And the lower fat cheeses if OK for your diet.
In the Complex Starchy Carbohydrates I saw: Oatmeal (plain), Cream of Rice, Cooked Rice (brown or white), Potatoes, Sweet Potatoes, Beans (white, pinto, kidney or black), Lima Beans, Corn, Peas.
Fibrous Vegetables all salad veggies including Asparagus, Broccoli, Brussels Sprouts, Cabbage, Carrots, Cauliflower, Celery, Cucumbers, Green Beans, Lettuce, Mushrooms, Spinach, Tomato, Water Chestnuts, Zucchini. and best Fruit when available is Apple, Blueberries, Cantaloupe, Grapefruit, Kiwi, Nectarine, Peach.
There was quite a selection in the Vegetarian section...there was chili, tofu chili, bean dishes etc. Go for the ones lowest in fat and high in protein, moderate carbs.
One thing to watch is the portion sizes, be sure to eat more of the fiberous carbs with your meals. The size of your palm is a good gauge for the portion size of you main food at a meal.

I was in College Foodservice for several years and we always made accomodations for people on restriced diets. I'm not sure if it is the case at OU or not, but you may want to look into it further if you haven't already. There are many people out there that require a different diets (diabetic, low sodium, Glut Free, etc... ) The foodservice is already deviating from the normal menu, see what you can do to get the items you are looking for. You just may need to be a little pushy.
Also remember, you are pay tons of $$, hopefully they will realize that and try to work with you.
One last thing, I have found that many cooks in that type of environment will add tons of butter and margarine to food to make it tast better. So even if you are eating oatmeal for breakfast, you may be taking in other unexpected ingredients.
