Have a BBQ day 1-2 a week, throw on some salmon, steaks and chicken, marinated and spiced. Make several. Put them in the fridge and grab-and-go!

Well I dont know what you are eating now but here are a few ideas. Turkey on whole wheat sandwiches. Tuna or egg salad made with FF mayo also on ww bread or with ww reduced fat crackers. (I like the wheatables) A grilled chicken breast with a salad or veggies and brown rice. Shredded chicken breast mixed with green chiles, onion and spices on a ww tortilla with FF cheese. Grilled turkey burger on a ww bun. I make everything up on Sunday and pack it in plastic containers, then it's ready to go every morning.

Okay, this is what I just had. Couscous salad. Makes a big bowl, enough for at least two or three. Cook about 2 cups whole wheat couscous (start w/ 3/4 c dry couscous), mix in some chopped green onions (or minced red onions), a big handful of chopped parsley, salt, cayenne, cumin, chopped celery, red bell pepper, or whatever else you have in the fridge, throw in a can of garbanzo beans (or whatever else you have in the cabinet), cubed firm tofu (white wave extra firm tofu is really good raw, some are nasty), stir it all up, drizzle a few teaspoons of olive oil over the top (doesn't take much at all), then squeeze a bunch of lemon juice over the top.
It is super quick. You could use brown rice or bulgur but that would take a lot longer. Of course, not if you had leftover cooked grains.
Obviously this is pretty high in carbs. LOL But has good protein too.

Tofu is a soy protein. Comes in several consistencies (sp). The most common thing Ive seen it in commercially is Hot and Sour Soup at a chinese buffet. Couscous is a tiny little rice like grain.

I believe I'll skip on the Tofu but the couscous sounds interesting. It's also fun to say. "I had a grilled chicken breast w/lemon and some couscous last night." Is it healthy? nutritious?

Is couscous nutritious? Well, it's about like any other pasta, I guess.
If you want something more nutritious but w/ a similar texture to couscous you could try...
Quinoa! LOL
KEEN-wa, a south american grain, very high in protein! Also the protein in quinoa is similar to soy protein in that it contains all nine amino acids. It isn't technically a grain, but it cooks up like a grain.
