Hey - I made this yesterday and it was really good!
Healthier Migas
3 oz ground turkey breast, cooked and crumbled
4 egg whites
1/4 c fresh pico de gallo (tomatoes, cilantro, onions and jalepenoes, diced finely)
1 oz hot style tortilla chips (19g cho, 8g fat (1g sat))
1/4 c 'mexican' style shredded cheese - a pre-mix of monterey jack, salsa jack and colby jack
1 spoonful fat-free sour cream
break up chips and mix everything but sour cream in a bowl.
Preheat non-stick pan, pour in mixture, scramble while cooking until no longer runny. Top w/sour cream. Yumm!
