That sounds good;
This is what I had 8 oz salmon,(nuked)12 oz green beans with cheese melted on top, (also nuked)and 2 slices whole grain toast dry, with a little peanut butter and celery sticks.
Latter for a snack I had a little frozen yogurt, and some plain pop-corn (whoopsy).
But I also did a split, did shoulders and back at the gym in the morning, and then xc skied for 1 hour 15 minutes after work.

asimmer, how do you cook the ground beef? I assume in a pan with some olive oil salt and pepper? That sounds delish!

I just ccok the ground beef in a nonstick pan or in my countertop smart grill (a george foreman type knock-off).
I buy the big packages of 93% lean ground beef and measure it into 3 oz portions, which i wrap in wax paper and put in a big ziploc bag. Then I can just pull out a portion and grill it, or pan-cook it when I want it. I often grill a few at a time so that later I can just add it to veggies for a meal - this helps keep me on track because I don't have the excuse that i have to prepare food...
