I got this idea from my mom: Depending on the size of the pumpkin....scoop out all the stuff from 1/2 of the pumpkin. Clean out all the seeds and strings of course. Put into a mixing bowl with some skim milk (again use an amount comparable to the amount of pumpkin) cinnimon, ground cloves, a bit of brown sugar and beat with a blender, then heat on the stovetop like mashed potatoes. You can use a heavier cream to make it smoother if you wish, or leave out the brown sugar and add some stevia or splenda (to taste) after heating. If you really want to go fat and tastey you can use some cream cheese, too.

Pumkin or butternut squash are both really good with curry!

Chop, clean and peel a medium pumpkin, or a butternut squash.
Heat a large pan (I have a deep-sided saute pan), add 1 Tbsp olive oil, add 1 copped onion, saute until soft, add 1-2 tsp curry powder(or more if you really like curry) and a dash of salt. Saute a minute to release the spices, add the pumpkin/squash and enough chicken broth or water to cover the pumpkin/squash. Bring to boil, then cover and reduce heat, simmer until the pumpkin/squash is tender, remove cover, turn up heat and reduce the water a little. MMMMMMMMMMMMMMMMMMMMM This is a recipe from a burmese cookbook, the book is in a box somewhere right now, so I am giving you this from memeory..sounds right, though...
