First one is: Bananas. I see people at the gym scarf down a banana after their split. I know they are high in potassium, but is their any other reason?
The second one is related to a bunch of posts I have been reading on fats. Recently I added an additional egg yolk (3y/4w) and peanut butter (usually 2-3 tbs on a slice of 100% whole wheat) to my diet to help increase my calories, but now I am worried that I am taking in to many bad fats. Are my worries justified? Is their something else I can eat instead to get the calories? Or just keep doing what I am doing?

Eating egg yolks will not hurt you. And peanut butter(natural peanut butter) is also good for you and a great way to get extra calories.
Schnohr et al. 1994. Egg consumption and high-density-lipoprotein cholesterol. J. Intern. Med. 235:249-251.
To determine the effects of egg consumption on plasma HDL cholesterol levels, twenty-four adults added two eggs per day to their usual diets for six weeks. Total cholesterol levels were increased by 4% while HDL cholesterol levels increased 10%. The dose adjusted response to the change in dietary cholesterol was 2.4 mg/dl per 100 mg/day. The authors concluded that "a moderate egg intake should not be rigorously restricted in healthy individuals."
*****Notice that HDL levels really rose!! (this is your good cholesterol)
And on another note, I would avoid the banana post workout.

Excellent, I like egg yolks.
Is there any reason for the avoidance of the banana after the workout? I typically have one in my afterwork out shake, but if there is something better to add I am all ears.
