Should I be at all worried about eating frozen veggies rather than fresh? For convenience reasons, more often than not I consume frozen, packaged vegetables. Am I missing out on nutrition by eating this way? Of course I do eat fresh veggies too, but like I said...sometimes pre-packaged is quite a bit easier. Any response would be appreciated. Thanks!

I read an article that said because they are flash frozen they retain more nutrients than fresh evegetables, which lose nutrients as they sit out at the market

I know that this is an old post, but I just wanted to bring it back up because I had the same question to ask. It is weird that Frozen Vegetables have more nutrients than fresh. I also heard though that if you microwave your frozen vegetables that it loses it's "good stuff" as well. Is this true? I think some man said it on Oprah or something.

If you can avoid the microwave for thawing, it is better. Also very high boiling...the slower you thaw or cook them is always best for nutrient retention.

I love the search function here.

I also use a LOT of frozen veggies, especially in stir fry. Does anyone have any reccomendations on what the better oils to use would be? Righ tnow I'm using peanut oil.

I am in love with making Thai Chicken Curry.
