Please help my mom's diet..it sucks!!

Ok.. I have been trying to relay information I get from you all here to my mother, and she doesn't think I am understanding things, or that I am relaying info incorrectly. So I had her write down a day of eating so you can critique it, and I can print it out and show her what you guys think of it in your own words. So here we go!!

Breakfast
1/2 cup cottage cheese
1 small tomato

Snack
Scrambled eggs and 1/2 chicken fried steak
3 cups of coffee

Lunch
1 Low Carb tortilla
1/2 an avacado
2 tbls salsa

Dinner
1 whole wheat pita
2 tbls humus
Diced tomato
Lettuce(both tomato and lettuce are fillers for the pita)
2 tbls shredded cheese
1 large tomato stuffed with humus and 2tbls flax seed

Snack
1 small apple

Be totally honest with what she needs to change and what she is doing right. Thanks for the help!!

for the little shredded cheese, you could have a decent size peice of fish for the same calories surely.
Make your evening snack a protein(meat, nuts, protein drink) because you dont want carbs too late in the day.
Theres no protein at lunch? Have the other 1/2 chicken steak instead of the avacado or aswell as.
She must be starving, there's next to no food on the plate! Look at brocolli, cauliflower, beans,celery, they are good low calorie givers and stomach fillers. What about oats or bran flakes for breakfast with a peice of fruit, say a banana? Well it's a few ideas to be thinking of eh.
So they say the rules are at least 5 portions veg/fruit, in the uk now says 9.. 8 or more glasses of water and a good balance of protein/carbs/fat at every sitting and to eat 2 to 3 hourly(6 plus meals a day)less carbs, but more protein in the evening.. try cutting out paper slips to the right ratio that you should have in a day each value to six peices of paper(the six meals) and then push the papers around till you get the daily meal configuration. I mean like write six each of protein= chicken, prawn, cheese etc and the same six of carbs= brocolli, apple, celery, tomato, banana etc.. and build a good picture with foods you like at... what a way to spend an evening eh? try it... and then be very tight on a portion size... monitor weight once a week same scales same day same time.

Snack

CHICKEN FRIED STEAK? hAVE 3 OZ STEAK, BROILED AND SOME VEGETABLES OR AN APPLE

Lunch
1 Low Carb tortilla
1/2 an avacado

ADD 4 OZ GROUND TURKEY W/TACO SEASONING, SOME LETTUCE

Dinner
1 whole wheat pita
2 tbls humus
Diced tomato
Lettuce(both tomato and lettuce are fillers for the pita)
2 tbls shredded cheese
1 large tomato stuffed with humus and 2tbls flax seed

ALL OF THE DAY IS LOW CARB EXCEPT DINNER???

TRY 1/2 A WW PITA, FILLED WITH GROUND TURKEY (LEFT OVER FROM MAKING IT EARLIER), LETTUCE, A SPRINKLE OF LOWFAT CHEESE, 1 LARGE TOMATO WITH HUMMUS AND FLAXSEED. A SIDE OF VEGGIES, OR USE THE HUMMUS AS A DIP FOR CAULIFLOWER FLORETS, MMM

Snack
1 small apple

HAVE YOUR APPLE EARLIER IN THE DAY, HAVE COTTAGE CHEESE AND SOME WALNUTS HERE.

Be totally honest with what she needs to change and what she is doing right. SHE IS EATING A LOT OF GOOD, HEALTHY FOODS, JUST NOT ENOUGH PROTEIN AND A LITTLE DIFFERENT ORDER... Thanks for the help!!

Oh, and she needs to drink a lot of water!
