Yummy Turkey Recipe

I've been making this for a couple of weeks now and last night I tried something different.

3/4 lb turkey meat
1 small onion chopped
Combine above on med high heat until turkey is done and onion is tender.
Add one 8 oz can tomato sauce and 7 oz chopped roasted red peppers. simmer 5 minutes.
add salt and pepper and 2 tsp liquid smoke.. serve on kaiser roll (I can't eat the kaiser so I just have it w/o bread)..
for my leftovers the next day at lunch, I add 3/4 cup black beans since I can have a majority of my carbs at lunch.

Another yummy turkey recipe... take ground turkey, mix in about 1 tsp to 1 tbsp of horseradish (I love horseradish so I use the 1 tbsp), mix into burger form. Spray pan w/ pam, cook turkey burgers until just about done, add one small can of tomato sauce, mix in any herbs, let simmer for awhile. When turkey is cooked through, put another can of tomato sauce in microwave safe container, microwave until warm. Put turkey burger on plate, spoon tomato sauce from microwave on burger, add shredded parmesan.. yummy!! I even saute portobella mushrooms and put that on it.

hey - here is what i mad efor my second meal today - yummy!

1 tsp olive oil
5 oz turkey (extra lean ground)
1/2 c red onion, chopped
1/2 c kidney beans

Saute all of the above until turkey is done (breaking into peices as it cooks), then add 1/2 c water and 1/2 packet of 'white chicken chili' seasoning. Simmer 10 minutes. Put in bowl, stir in 1-2 tbsp sour cream - awqesome (only problem is I want MORE!!!)
