The cottage cheese is fine. I would add in some more good carbs, and more protein. What are your fat sources?
You may want to cut back on those sit-ups. One doesn't need to do 100 when done properly.
Don't get discouraged, it all takes time and patience.

You need good proteins and fibrous veggies. Also, you have no EFA's in your diet. You cannot retain the muscle you have with this diet. Protein for instance needs to be consumed at 3 hr. intervals always. YOu go hours without any or very little. You need to drop the bananas, etc. Have some lean proteins and fibrous veggies. YOur wafer thin turkey needs to go too. It is not near enough protein, and inferior at that(as most all processed lunch meats are). YOu would be much better to sub some tuna in place of it for example. Add some EFA's also. And one other note, I bet your metabolism is slowing on you. If this is all you eat you listed, your body is probably reacting to starvation mode and working to store fat.

If we had more info on yourself it may be easier to judge. Are you a male or female? What do you weight? Whats your height? Whats your age? How long have you been training? Do you have access to a gym?
Carivan is correct; 100 Situps and 200 pushups is over kill. Add resistance by holding a wieght to your chest when doing situps, and placing a weight on your shoulders/back when doing pushups.
As for your diet, its hard to tell because I don't know what your weight is, but you don't seem to be eatting often enough. Four meals a day is better then three, but I would aim for 5 to 7. Your foods seem pretty clean otherwise.
-------------- - Its never about how much you can lift, or how many reps you do. Its just about doing it, and doing it right.
- If your hungry all the time, your not eating enough. And anyways, being hungry sucks.

an added question id like to ask is , am i best to add cannalini beans or wholegrain rice to this instead of cottage cheese for my dinner?
beans = less dishes to wash :)

Keep the cottage cheese AND add some beans and rice, and get paper plates!
I think they're cheaper than dish soap.
Seriously, you need another meal in there anyways to be eating every 3 hours, something with a combination of protein, carbs and those EFA's BB1 told you about. Fish, chicken or turkey with some broccoli, asparagus or green beans.
