I'll be gone with no access to a gym, should I just do cardio??? And should I make up the week at the end of my 8 weeks?

When did you start the program? You may be due for a good week off. Just keep up your diet and rest. Your muscles grow while resting not at the gym. 1 week will not make a big difference in your body as long as you eat right and come back. If you feel guilty, you can bring dumbells with you to use. Cardio would also be fine to do but be sure to get the proper nutrition before and after.

If you want to some things, you don't need a gym to do sit-ups, tricep dips, chin ups, press ups, hamstring kickbacks and sissy squats, and if you can find something heavy to hold you can improvise squats and lunges.

you can do some curls with, a gallon full of water, as wel as some tricep over head extensions.
you can do body weight squats, or one legged( foot onbed)
sit ups
push ups
incline push up( feet on bed)
decline( hands on desk or chairs)
dips
calf raises on a step
jump rope
buy some excercise bands, you can do alot with those.
