I just finished a batch of brownies made with as many "healhty" substitutes as possible, and I have to say I'm quite impressed with how good they are. Figured I'd share it with you guys, mostly because I'm bored, heh. I simply took my mother's favorite brownie recipe and swapped out oil for applesauce, eggs for eggbeaters, etc.
Ingredients:
1 cup splenda
1/2 cup eggbeaters (or eggwhites)
1/2 cup unsweetened applesauce
6 tablespoons cocoa powder
1 teaspoon vanilla extract
1/6 cup whole wheat flour
1/6 cup whole oats, finely chopped (30 seconds on high in a food processor works)
1/2 teaspoon baking powder
1/2 teaspoon salt
Directions:
Preheat oven to 350. In a small bowl, combine splenda, eggbeaters, applesauce, cocoa powder, and vanilla extract. Beat until creamy. Add flour and oats, baking powder, and salt. Mix well. Spread into 8" square greased (with Pam or another no-fat spray, of course) baking pan. Bake at 350 for 30 minutes.
There's a whopping 470 calories in the *entire* batch of brownies. Cut it into 16 pieces and that's only 30 calories per brownie. The whole wheat flour/oats combination, instead of regular white flour, also adds some decent fiber, making them even better for you.
The one downside is the brownies have a chewier texture (slightly similiar to whole wheat bread), but taste pretty good consider they've got 1/4 the calories of regular brownies. And instead of frosting, I simply stick a brownie in the microwave for a few seconds to warm it up, then put on some sugar-free strawberry jelly.
