Ok, so last night we had my sister in law and her boyfriend over for dinner. They had been going to have pizza, and when we told them to come over, she made the remark of "Oh yay I get to have a healthy dinner tonight." I just wanted to know if what we had was really that healthy, as it is a version of what we usually have at least 2 a week. We had:
Pork Loin Filet (prepackaged with lemon herb marinade)
Boiled Potatoes (condiments for use inc. butter, fat free sour cream, cheese, salsa, salt & pepper)
Salad (mixed greens, not all ice berg)
Normally I would have added a veggie as well to this, but her bf is SOOOOO picky, I stuck with what I knew he would eat so there was no complaining. Is this kind of a meal ok?

Not too bad, as long as it was in moderation. Pork loin filet is pretty lean by the nature of the cut, and I'm assuming that you didn't load the salad up with dressing. The only thing I would change would be the potatoes: bake instead of boil. A potato (including skin) that is baked has a much lower GI rating than boiled or mashed.
