This is from the New Betty crocker cookbook
I love potato pancakes, but they are not the best thing for me to be eating... so i decided to try this recipe - i love sweet potatos and squash is okay...These are low-fat, low-cal, and low cholesterol (by Betty's standards)
1 tsp vegetable oil
2 cups shredded unpeeled sweet potato (about 1 large)**
1 cup shredded unpeeled yellow summer squash(about 1 medium)
1/4c shredded onion 9about 1/2 a small)
1/4c egg substitute, or 2 egg whites
2 TBSP chopped, fresh chives, or 1 TBSP freeze-dried chives
1 TBSP flour
2 TBSP lemon juice*
1/2tsp salt
1/4tsp pepper
Heat oven to 200, Spray griddle or 10-inch skillet with nonstick cooking spray; add oil.
Heat griddle over medium heat or to 375. Mix remaining ingredients. For each pancake, scoop 1/3c mix onto hot griddle;flatten slightly. Cook 5 minutes on each side or until dark brown. Place cooked pancakes on ungreased cookie, and keep warm in oven while cooking remaining cakes. Six patties.

** The large sweet poatao I shredded made 4 cups, and the medium squash made almost 2 cups, so i put the second half in a container for tomorrow or the next day. The onion amount was correct, though I shredded the whole small onion, for the second batch.
* The lemon juice was too much, I am gong to make these tomorrow or tuesday and leave the lemon out, i bet they will taste better. they weren't bed, just too lemony.
