Preheat oven to 350 degrees. Spray a small baking dish with cooking spray/olive oil. Slice two medium yukon gold potatoes into 1/4 inch slices, drizzle with olive oil and sprinkle with seasoning blend of choice (Emeril's Original is good), stir a littler and press down in dish. Top with 2 slices fatfree swiss cheese, cover with foil and bake 35-40 minutes.
Very tasty and easy!(I baked them on the lower shelf while the chicken breasts baked on the upper shelf)
