Watching what I eat and trying to come up with some healthy ideas for meals. What did people have for dinner last night?

Inside out 'Bren'chiladas. :)
2tbs canola oil
1 tbs minced garlic
1/2 cup diced onions
1/2 cup diced red and green peppers
two corn tortillas torn into small pieces
When those were cooked to my liking, I added:
1/2 cup yellow hominy
whole white mushrooms
1 15oz can of mild enchilada sauce
Cook until heated through.
I served it over jasmine rice.
In the rice:
caraway seeds
anise seeds
tarragon
crushed mint leaves

Eat it as a side dish, cook it a bit like rice, and is a source of complex carbs, and protein.
