I was a competitive swimmer for a long, long time and my Triceps are disproportionately large. How do I focus on shaping a noticeable difference between my shoulders and triceps so my arms don't just look big or fatty?

Train your shoulders, biceps, triceps, and chest including back. By doing this you will get the tapered look you are looking for. Try a program from here on Freetrainers and include "the wide shoulders" routine.
And welcome to freetainers.

As a swimmer, I'd presume he'd have very wide shoulders already. Perhaps he needs to work more on defining them, lose some weight and do more reps. As carivan said, your whole body needs to be worked out so you look proportionate and shapely. Large, shaped arms on a small chest and back will look really funny.

I'm not disappointed with my physique overall. While my shoulders are wide, I've also got a wide trunk (which unfortunately tends to get flabby). I'm just trying to learn how to shape my arms to avoid looking large but undefined.

aim for reps of closer to 10 for your sets, maybe even 12.. then you won't necessarily build as much, but will shape your muscles
