I currently am doing 30 - 60 minutes of cardio. I there suck thing as too much? At some point does it no longer affect the body?

My understanding is your body can get into a routine where it expects the cardio and will stop burning as efficeintly as before. Change up your cardio...get on a bike or stair stepper...something different. Even better lifts weights for a few weeks, say 30-40% of max and do it quickly with little rest between sets.
I started losing weight on a circuit training program. Something like this:
1 set/20-30 reps - Crunches
1 set/12 reps - curls (30-40% Max)
1 set/12 reps - leg extensions (30-40% Max)
After you've done that then start back over with the crunches for a total of 3 sets of each again. Then do 3 more sets of something else starting with Abs, Arms, Legs. All after warming up with 5 minutes of Cardio of course.
That worked for me to drop my first 13-14 lbs....combined with 30 minutes of Cardio at the end. Now I've picked up a freetrainer program and just getting started on that this week.
That program is fun for someone just getting started with weights...I'm glad I did that...got me used to using some of the machines and got me comfortable with the environment as well. Now I'm working with dumbbells and I feel like a little gimp at times...but it's the same way I felt when I started my circuit program so I know it will pass.

What are your goals?
If you are looking to build muscle then you should be doing less cardio than someone who is training for an endurance event. If you fill out your profile, we can give more specific info.

I currently would like to maintain my weight or lose a few more lbs and also tone my body.

Unless you are training for a long distance endurance event, there is no need to do more cardio than you already are doing. (30-60min) The key to losing those few extra pounds will be in your diet. Now if you are training for a long distance endurance event, 60 mins of cardio is just getting warmed up. good luck.
