How do you overtrain and when do you know you have overtrained?

I would say "overtraining" results from working out too often (not giving your body the required rest), and mentally not feeling like working out. There are many symptoms like, joint pain, weak, don't feel right, not into it, etc. Just listen to your body.

If you are actually getting weaker each time you train a muscle group, this is a great sign you are not resting it long enough and overtraining. Irratibility, constantly being tired are also good signs in addition to Carivan's points.
