Lots of famous and well known bodybuilders such as Arnold have been known to workout about 4-6 hours everyday. Isn't that overtraining? And wouldn't that hinder their training if it was overtraining? But apparently we know that it didn't for them... So what is the deal? Everyone says "train your each muscle once/twice a week" and "don't have a training session more than 1 hour" but does that not apply to those 4-6 hour a day trainers such as Arnold?

You have to remember, those guys have a little "help". The natural bodybuilder needs much more time and nourishment to recover from a brutal training session. The "pro" as you are talking about can work out brutally for hours, go home and eat some M&Ms basically, (exagertion to make a point), and gain muscle. Steroids stop any catabolism that normally occurs, and shifts all pathways towards anabolism, so they recover much quicker and gain much faster. This is a pretty basic response, without going into the science of things.
