I'm trying to build back "thickness" instead of "width". I was wondering what exercises work and how many times a week I should work out?

Bent rows and deadlifts as well as chins Once a week as heavy as you can go....

You'll need to use close grip handles....... and rowing is a great exercise.
If you take really heavy, working your back once a week is enough.
