Okay so after all the reading on here in the last month or so, I think I have it all down. I know what I can eat and what I can't eat.
Now when counting....
Carbs??? does dietary fiber count in your daily carb count?
Fats??? does the polyunsaturated fat and the monounsaturated fat count?
ft nutrition says I need 2384 cal, 29g fat, 358g carbs, and 179g protein
they all seem high. i am having trouble getting all the protein and staying under on the fat. but it's all good fats....any suggestions?

Carbs, If you're talking dietary fiber sups like metamucil, the no. Other food sources of fiber then yes. At least that's the way the Adkins carb counter says.
All fats count. But you already know the ones to avoid.
I've found that a little extra "good fat" doesn't hinder my weight loss when I'm cutting. As to reducing the other fats, processed foods are the worst offenders. I end up eating gobs of fish and lean beef as well as eggwhites. You kind of have to research and pick carefully to find what suits you best.

I think the carb content in those listed as "fiber carbs" is different and doesn't have much effect count-wise but i'm not sure. Maybe Amy or Bropie or BB1 will weigh in here.

I tend to count the rice, sweet potatoes, barley, grains and potatoes, fruits when i count my carbs - usually i view fibrous vegetables a s free food (unless pre-contest, when everything gets counted).
