Hey guys,

Threw this recipe together and turned out pretty good. How do I figure out all the values for it, and does it sound balanced?

Ingredients;

1 3/4 cup (one can) low fat/low sodium chicken broth
1 cup jasmine rice
handful(about 1 cup) chopped broccoli
handful (about 1 cup) fresh spinach
4-6 egg whites
1 egg yolk
tortillas
ground pepper
salt to taste

Directons;

Prepare rice per instructions, but use the broth instead of water. Makes about 3 cups cooked rice.

steam broccoli to precook till just tender

sautee broccoli in olive oil till heated through, add spinach till wilted, add eggs, pepper, salt scramble all together till egg is cooked, add rice and sautee a couple of minutes till mixed through.

Tada! I ate half of this, then the other half I made about six tortilla rollups and ate them cold for a couple of meals.

I just made this out of what was laying around, but I would probably like mushrooms and maybe some chicken in it too.

Sounds delicious. To figure out the nutritional value you could use the nutrition tracker on this site. With the FT free version you'd have to enter each ingredient seperately and then add it all up. Then divide the total by the number of servings you made. One of the reasons I upgraded to FT-Pro was for the customized nutrion tracker, it is much easier to use and you can save what you calculate as a recipe for future reference, but the free version works fine.
