How does this work? I've heard of the upper body/ lower body splits, but these routines are split even more. I mean they show me only working each group one out of 7 days, does this actually work?

sure does. theres alot of variations of splits.. all depends on the time you can allocate to workout each week, your goals, etc. the single muscle group a week split is good to focus on development of a specific muscle (ie for biceps.. doing just dumbell curls won't get you perfect arms. you need preacher curls to develop lower, incline curls to develop higher, concentration curls to work on the peak, etc.)

Yeah, if you think about it, if you are working say one or two muscle groups only in a workout, you can train them with much more intensity, recover better, thus produce more growth. The more advanced you become, the more this is needed.
