When you do have time make extra. When I have chicken and rice, or what ever, I make a bunch extra, mix in some spinach, shrooms, egg whites, chicken, whatever you like, sautee it all together, then make roll ups with whole wheat tortillas. They are yummy, and quick.

Salmon and rice is actually pretty quick if you ask me. the rice takes 20 minutes (less if you get instant) and the salmon only takes about 20-30 minutes depending on how thick or thin the filets are. Just sprinkle some lemon juice and ground pepper, or old bay is also very good on salmon. Viola! Easy as pie.
How about tuna salad? use lowfat mayo and dill relish instead of sweet pickle relish. eat on whole grain bread. It takes all of 5 minutes.
