I'm trying to gain lean mass. I'm aware that I should be having somewhere around 200-300 cals (correct me if you think otherwise) over my maintenance level.

I worked out my upper body today, and yes, ate 200-300 cals over what my body needed. Also, I train very seriously for ballet daily (sundays off). Hopefully that won't hinder the recovery/growth of my muscles.

My question is this : Do I eat 200-300 cals over tomorrow also? Or should the increase in food only be on my actual workout day?

no.. keep it consistent all days of the week. your body will put the extra cals to work repairing muscle, so its best to stay at the same level.
