I play rugby and want to be stronger but don't want to become one of those huge guys that can't move or loose any of my mobility. Should I incorporate speed and agility training on days that I don't strength train.

i do this kinda fighting fit workout video by mark richardson it strenthens you and myakes u faster as well its got kicking and punching and everything to really speeden up your agility. search for it on the net its really good it may help you.
