I made this chicken the other day - really good!
Chicken tenders Preheat oven to 350 degrees. Cut boneless skinless chicken breasts into strips lengthwise, (one breast per female, two for a male). Use regular style shake and bake to coat the chicken strips, place on a baking sheet sprayed with cooking spray, spray strip tops lightly with cooking spray and bake 15 - 20 minutes (until done). BBQ CHICKEN BREASTS
Marinate chicken breasts in Poultry Marinade for 1 hour. Cook chicken over medium heat and brush with BBQ sauce lightly before serving. 1 cup vegetable oil 1/2 cup dry white wine 1 tsp. vinegar 1 garlic clove, finely diced 1/2 tsp. paprika 1/4 tarragon 2 tsp. salt combine ingredients in a dish. Then simple submerge chicken breast(s). Good Luck! CHICKEN PARMESAN 2 boneless / skinless chicken breasts 1/2 cup bread crumbs 2 tsp. grated parmesan dash of salf & pepper 1 egg 2 tbsp. white flour 1 tbsp vegetable oil 1 cup tomato sauce Ok. pound the chicken breast lightly until they are thin and tender. Next, in a dish combine parmesan, salt & pepper. Then in another dish beat the egg. Now, pat the chicken breast with flour, then into the egg, then into the parmesan concoction. In an oblong dich, pour in the oil and heat onm MEDIUM for about 1 minute. Next, place the chicken into the dish and cook on MEDIUM for 2.5 munutes on each side. Remove chicken from microwave and let stand 3 min. Heat tomato sauce in a bowl at MEDIUM for 2 min. Pour the sauce over the chicken.. and maybe some left over parmesan and you're done! .. ft Paradigm Status I do a homemade pasta sauce with chicken meatballs. You need: extra-lean ground chicken breast, mixed with egg white (2 whites per pound of meat), pepper, oregano, basil minced garlic and a few crushed whole-grain crackers to bind it all together. I cook them in the steamer before adding them to homeade sauce. (the steamer lets any fat off). After simmering for a few hours in tomato sauce, you can't tell they're low fat! serving suggestions were: whole wheat pasta adding cottage cheese instead of parmesaen baking them on a rack |

MEDITERRANEAN CHICKEN

Add chicken; cook and stir until browned and done. Add tomatoes and olives; cook until heated through. Season to taste with salt and pepper. Serve over pasta or rice, if desired. Chicken Saltimbocca
6 chicken cutlets(or pounded out breasts..really thin) 6 pieces of deli ham(or prosciutto) 1 package thawed out frozen spinach minced garlic to taste shredded low fat mozzerella cheese 1 can low sodium chicken broth 1 lemon Salt and pepper to taste Take a salt and peppered chicken cutlet and lay 1 slice of ham on it. Spread a thin amount of the spinach and garlic along the breast, then sprinkle with mozzerella. Roll up the chicken and secure with a toothpick. Brown on all sides in a pan with a little olive oil. After browned, pour in the can of chicken broth and the juice from the lemon and let simmer for 5 minutes. Take the toothpicks out,spoon some of the nice lemon sauce over the chicken, and enjoy. I make this with asparagus and some wild rice. |

Cola Chicken(another one that doesnt sound good, but I swear it tastes good)
1 lb of chicken breasts(boneless,skinless) 1 cup of ketchup 1 12oz can of diet cola place chicken in non-stick skillet. Pour ketchup and cola over it. Bring to a boil-cover and reduce heat. Cook 25-35 min. uncover turn up heat and cook until sauce thickens and adheres to chicken. |

ground turkey and wild rice casserole
5 servings 16oz lean ground turkey 1 cup chopped celery 3/4 cup chopped onions 2 cups water 10.5oz campbell's 98%fat free of mushroom soup 6oz instant long grain and wild rice 1/2 cup low fat shredded cheese preheat oven to 325. cook turkey in large skillet over medium high heat until browned, breaking up with spoon,about 5 min. add celery and onion and cook until tender, stirring occasionally, about 5 min. pour off drippings from skillet. mix in water,soup,rice(with seasoning packet) and cheese. Season with salt and pepper to taste. transfer to 2-quart baking dish. bake until rice is tender, stirring occasionally, about 1 1/2 hrs. keep covered the first 1 hour of baking and uncover the last 1/2 hour. |

Spice-Rubbed Chicken Fingers Try a new take on chicken with this zesty Caribbean-inspired recipe. A cilantro dipping sauce makes the best accompaniment, but you may choose to substitute a prepared sugar-free barbecue sauce. Approved for all Phases. Spice-Rubbed Chicken Fingers with Cilantro Dipping Sauce Serves 2 Ingredients 1/2 teaspoon chili powder 1/2 teaspoon ground cumin 1/8 teaspoon salt 1/2 pound chicken-breast tenders 1/4 cup cilantro sprigs 2 tablespoons parsley sprigs 2 tablespoons blanched, slivered almonds 1/2 clove garlic 1/2 serrano chile pepper, seeded (wear plastic gloves when handling) 1/16 teaspoon salt 1 tablespoon lime juice 1 tablespoon extra virgin olive oil 1 tablespoon water Sprig cilantro, for garnish Instructions Coat a grill rack or broiler-pan rack with cooking spray. Preheat the grill or broiler. In a cup, combine the chili powder, cumin, and salt. Cut two 1/2-inch-deep slashes in each side of the chicken tenders. Hi everybody:) I've had this AWESOME chicken recipe I would like to share with everybody. It's quick, easy and super yummy!
-skinless, boneless chicken breasts (6) -eggs (whole or just whites) (4) -fresh lemon (1/2) small -parmesan cheese (lowfat or regular) the powder kind (about 1 cup or more) -olive oil Here is what you do. Take a shallow bowl and crack open the eggs, then beat them with a fork, add the juice of 1/2 lemon to the beaten eggs. Take a 2nd shallow bowl and fill it with the parmesan cheese. Now take the chicken breast and dip it in the egg mixture, cover well, then dip it in the parmesan cheese, coat well. Saute' the chicken in a little olive oil. ALL DONE. I have cut back on some of the original recipes ingredients but I think you can even cut down the amount of corn tortillas you use. This is very easy and delicious. 6 corn tortillas cut in 1/2 16oz Can of FF refried beans 10oz can Chicken(drained and flaked) 1 1/2 cup of salsa 5 slices 2% pepperjack cheese. Heat oven 375. spray 8x8 dish with cooking spray. place 1/2 cup salsa on the bottom, spread evenly. Place 4 tortillas 1/2's with the straight edge facing outside of dish. Spread 1/2 beans on top of the tortillas. sprinkle 1/2 of chicken on top. Place 1/2 cup salsa on top of chicken. place 2 slices of pepperjack cheese on top( i break the cheese up and spread it out). Repeat layer, except place the tortilla 1/2's with the round edge facing outside of dish. Cover with foil and bake 40 minutes or until hot all the way through. remove foil and bake for a couple more minutes. sit 2-3 minutes before serving. 6 servings Cal. 207.5, Fat 8, carb 29, protein 18 |

I didn't qant to cook dinner, too hot..this is what I came up with-
Craisin Chicken Salad 2 grilled boneless, skinless chicken breasts, chopped 1 medium apple, chopped 1/4c craisins 2 oz mixed nuts, chopped 2 stalks celery, chopped Dressing 2 TBSP smart balance mayo 1 tbsp Dijon mustard ½ tbsp sugar free maple syrup 1 tsp lemon juice Mix all of the salad ingredients in a medium bowl. Mix all of the dressing ingredients together in a separate bowl, then pour over and mix with salad. Totals Calories 905.5 Protein 68.15g Fat 43g CHO 66g Fiber 10.8g 2 servings 452.75 calories / 34g Pro/ 21.6g fat/ 33g CHO/ 5.4g fiber Serve over a heap of torn romaine lettuce or salad greens of your choice. This recipe seems high in fat, but the fat comes from unsaturated (good fat). If you want to reduce the fat content further you could use a low or no-fat mayo and only 1 oz mixed nuts. You could also use all walnuts in place of the mixed nuts (slightly healthier), I just had mixed nuts in the cupboard, so that is what I used. 2 easy chicken recipes
This is the easiest way to make chicken breasts and my daughter even likes them! preheat oven to 350 degrees. place frozen bonelss,skinless chicken breasts in a single layer in a 9X13 pan. Pour a can of Organic or low sodium cream of chicken or cream of mushroom soup over the breasts, turning them once to coat them. Cover pan with foil and place in oven. Check internal temp of chicken in 45 minutes, depending on the thickness of the breats it will take 45 minutes - 1 hour. You can throw some potatoes in next to the pan for baked potatoes, they take an hour. The soup in the pan makes a tasty sauce for your baked potato. I also make up a second pan with my own favorite coating and cook it at the same time: Amy's spicy-sweet chicken about 1/2c lime-chili hot sauce (Frank's) 1-2 tbsp splenda (depends on hot or how sweet yuou like it) 2 tbsp lowfat or fat free sourcream. Blend ingredients and pour over two chicken breasts in a 8" square pan, cover with foil and bake at 350 for 45 minutes - an hour. MMM spicy. -------------- You don't drown by falling in the water. Hoisin BBQ chicken from Cooking Light Cookbook
This recipe is really tasty and the sauce is good on everything! BBQ Sauce: 2/3c hoisin sauce 3 tbsp rice wine or sake (I used cooking sherry because it was on hand) 3 Tbsp low-sodium soy sauce 3 tbsp ketchup 2 tbsp brown sugar (I used the splenda blend, so only 1 tbsp) 1 tbsp minced garlic remaining ingredients: 8 skinless chicken legs (about 2 lbs) 8 skinless chicken thighs (about 2 lbs) cooking spray 1. Prepare bbq sauce by combining first 6 ingredients in a medium bowl. Place 3/4 c sauce in a cup/bowl and refrigerate. 2.Take remaining 3/4c sauce and pour over chicken, either in a large bowl or large ziplock bag. Refrigerate 8 hours or overnight. 3. Preheat oven to 375 degrees. 4. Remove chicken from marinade and reserve for basting once during cooking. Place chicken on a broiler pan coated with cooking spray. Bake for 30 minutes, turn chicken, baste with resreved marinade(not the sauce you set aside in the seperate cup/bowl). Bake additional 20 minutes, or until done. Discard marinade. 5 bring remaining sauce (the stuff you set aside) to a boil in a small saucepan; reduce heat and cook until slightly thickened (about 5 minutes). Drizzle chicken with sauce. Yield 8 servings (1 drumstick, 1 leg, 1 tbsp sauce) Calories 241 fat 6.1g Protein 26.6g CHO 17.8g Fiber 0.7g Iron 1.7mg calcium 26mg |

Guilt-free burgers from Shape magazine, April 2006
Asian Chicken Burgers with Wasabi Ketchup Serves 4 Prep time 10 minutes Cook time 6-12 minutes 1 lb ground chicken or turkey breast (I used purdue 99% fat free turkey breast) 1/4c chopped fresh cilantro 2 cloves garlic, minced 1 tsp reduced-sodium soy sauce 1 tsp ground cumin 1/2 tsp salt 1/4 tsp black pepper cooking spray 4 tbsp ketchup 1 tsp wasabi paste 1. In a large bowl combine first 7 ingredients well. Shape into 4 patties, each about 1 inch thick. 2. coat a large grill pan or griddle (or use your george foreman grill) with cooing spray and set over medium heat. When pan/grill is hot, add burgers and cook 5-6 minutes each side (5-6 minutes total on the foreman) until cooked through. 3. mean while mix ketchup and wasabi paste well in a small bowl. Serve burgers on whole wheat rolls (or just with a lot of vegetables) and 1 tbsp ketchup mixture. 1 burger & 1 tbsp wasabi ketchup: 261 calories 9g fat 27g carbs 18g protein 4g fiber 57mg calcium 1.4mg iron 792mg sodium Those numbers seem odd to me, seems a little high in carbs for the ingredients and low in protein, when I made a similar meatloaf recipe one serving was 29g of protein and 9g carbs.... Not Your Mother's Meatloaf - Laura Creavelle, M&F July 2004
15-16 oz extra lean ground turkey (I used purdue 99% fat-free) 3 tbsp yellow cornmeal 1/2c minced onion 1/4c egg substitute (or 2 egg whites) 1 medium jalapeno pepper, seeded and minced 3/4 tsp salt 1/2c mild or hot salsa (your pick!) nonstick cooking spray Preheat oven to 375 degrees and spray 4 large muffin cups with cooking spray. In a medium bowl, mix together everything but the salsa. Mix well. Divide mixture into four equal amounts, place in prepared muffin cups. Bake 20 - 25 minutes, until done (thermometer should read 165). Serve topped with 1 tbsp salsa. Per mini-meatloaf: 170 calories 29g protein 9g carbs 4g fat 1g fiber This recipe is very tasty, not as spicy as it sounds and is good over rice. Here is another chicken recipe - so tasty! I am going to try maikng this with splenda instead of sugar next time around, i will report back how that turns out...
Vietnamese 5-spice chicken 3 tsbp oil 2 tsbp soy sauce 3 tbsp minced ginger 2 tbsp minced garlic 2 tbsp sugar 2 tsp ground turmeric 1 tsp 5-spice powder 1/2 tbsp sea salt Mix all ingerdients together, make a few slashes in some boneless , skinless chicken breasts (or use tenders), marinate 4 hours - overnight. grill. Here is a recipe I have used for General Tsao's chicken that is less greasy :
It is from a Martin Yan cookbook The General's Spicy Chicken serves 4 12 oz boneless, skinless chicken breasts, cut into 3/4" pieces Marinate the chicken in 2 Tbsp soy sauce (you could use low sodium soy sauce)and 2 tbsp cornstarch For the Sauce: 2 tbsp hoisin sauce 2 tbsp rice vinegar 2 tbsp water 1 1/2 tbsp light soy sauce 2 tsp sesame oil 2 tsp sugar (you could use splenda) 1 1/2 tsp hot pepper sauce to cook 2 tbsp cooking oil 10 dried whole chilis 2 tsp garlic, chopped 3 green onions, cut into 1" pieces Combine marinade ingredients in a bowl, add the chicken and stir to coat. let stand 15 minutes. Combine the sauce ingredients in a bowl. Place a wok over high heat until hot. Add oil and swirl. Add chilis and cook 10 seconds, add chicken and garlic - stirfry 2 minutes. Add onions and sauce - cook until sauce thickens - 2-3 minutes. Continue cooking to caramelize or until all pieces are well-coated, about 1 minute. If you like the flavor in fresh spring rolls you will like this 'salad' I have had this made with beef and with chicken, both are good. The hostess of the party at which I tried the chicken version said her husband also makes it with seafood.
This version, which I found online, is not very spicy at all, so I am guessing it has been 'Americanized' because the authentic version I had at the party was spicier (and they said it wasn't full heat because the party had a lot of children eating.) They served hot chile sauce on the side to spice it up further. At a Thai restuarant this is served with a mound of sticky rice and a clear soup. You take a scoop of the laab, a scoop of sticky rice and a spoonful of soup. At my local Asian Grocery you can buy laab at the deli and it comes with lettuce leaves to wrap it in to eat it as a snack. I am eating just the meat mixture, since my current plan is fairly low carb, and it is excellent on its own. You can ask the butcher to grind chicken breasts for you if you want to make chicken, or you can finely chop the raw chicken yourself, which is tedious, lol. LAAB NUEA (GROUND BEEF SALAD) (or chicken or seafood/shrimp) Serving Size : 4 1 lb Ground beef or chicken, ground or finely minced 2 tb Fish sauce (nam pla) 6 Shallots, thinly sliced - chopped 3 1/4 inch slices galangal, minced 2 tb Ground roasted sticky rice** - ground (prik khee no pon) 1/4 c Lime juice 2 tb Scallion (spring onion), 2 tb Cilantro leaves, chopped 1 t Thai red chili pepper, 15 Mint leaves Description: The blend of fresh herbs and lime juice makes this salad very refreshing. This laab recipe was taken to Bangkok by the people of the Northeast and is one of the favorite dishes of Thailand. Other meats such as chicken or pork can also be used. Directions: Combine the ground beef with the lime juice, fish sauce, galangal and shallots. Heat a skillet and cook the ground beef mixture on medium-high heat for 5 minutes or until the beef is cooked. Remove the skillet from the heat and add the chopped green onion and cilantro and the ground roasted rice. Mix thoroughly so that everything is well combined. Remove to a serving plate, spoon the ground pepper on the side of the plate if desired, and garnish with the mint leaves. Serve with an accompaniment of raw vegetables, such as long string beans or snake beans, sliced cabbage, green leaf lettuce/Chinese lettuce, basil leaves, and swamp cabbage or spinach. I added the chili pepper, minced, and the cilantro and mint , chopped, all at once with the rice powder. I also only used one tbsp rice powder to reduce the carb content and it tastes just fine. ** TERMS Roasted sticky rice: Prepared by adding raw sticky rice to a hot skillet and cooking until it is golden brown. Add a tablespoon of water to the pan at occasional intervals. Grind in a mortar with a pestle if ground roasted sticky rice is needed.** I found pre-ground roast rice powder at the asian grocery. Galangal (kha): A relative of the ginger root, galangal is pale yellow and has a unique, delicate flavor. Fresh young ginger root, but not dried ginger, is an adequate substitute, but does not properly replace the unique flavor. Fish sauce (nam pla): A salty, pale brown liquid used widely in Thai cooking, this is made from fermented small fish or shrimp. The fish are salted and fermented in jars and then the liquid is collected. Chicken Roulade serves 4
4 5oz chicken breasts 20 asparagus spears fresh or thawed frozen 2 tsp Instant gourmet butter blast with garlic 1/2 tsp onion powder 4 tbsp grated parmesan 1 can reduced sodium cream of mushroom soup toothpicks or small skewers Preheat oven to 375. One at a time, place chicken breasts in a freezer bag and pound flat to 1/4" thickness (use a meat mallet or a dumbbell). Mix together butter blast and onion powder. Lay chicken pieces out flat and sprinkle evenly with seasoning mixture. Sprinkle 1 tbsp of parmesan on each breast. place 5 asparagus spears at one end of breast, then roll up tightly and secure closed with a toothpick. Place seam side down in a baking dish that has been sprayed with nonstick spray. mix the soup with half a can of water and pur over the chicken in the baking dish. Cover with foil and bake 30 minutes. My daughter won't eat asparagus, so i put red fat cheese in her chicken breast,she liked it a lot. You could sub any vegetable mixture, too. i am going to try spinach tomorrow. -------------- It doesnt matter.
