First off congratulations on "seeing" your needs and addressing them.
As far as baked cottage cheese, never have heard of it. Are you sure that is what it is?
Maybe your are thinking of a brand name instead, Breakstone? This is good stuff.

Ive heard of people baking cottage cheese in things. And that tastes really good. And lol if you want, and cant find what your looking for... it never hurts to experiment a little. Try it out for yourself. Buy your own splenda. Mix till you like it. Then heat it up. Couldnt hurt.. lol and even if it does end in disaster lol, cottage cheese isnt that expensive. just my 2 cents

I am definately gonna have to try the PB thing, I tried Cottage Cheese for the first time last night and I have to put some in my mouth and take a big drink of water in order to swallow it. I need to change the taste.

I like adding splenda and vanilla flavor to my cottage cheese, kind of a sweet desert replacedment. I also add cottage cheese to my oatmeal, makes it kind of creamy.

Add Cottage Cheese to my Husband's egg white omelet everynight. We use this instead of milk. I have started using cottage cheese instead of milk in alot of my recipes.
Try this link, it is called the Cottage Cheese page, lots of good recipes.
