I am having some trouble finding good healthy cooking oils. I use olive oil in italian cooking and as a dressing for salads, etc, but the flavor is too strong for other things. I've heard canola/rapeseed oil is good because it has lots of mono-unsaturated fat and a good omega-6 to omega-3 ratio but unfortunately i cant find any in Denmark. My girlfriend bought some sunflower oil but I'm not too sure. I heard the poly-unsaturated is bad for you, especially when heated to high temperatures and that sunflower oil has a bad omega-6 to omega-3 ratio which is damaging to health. But other places say it has a high smoking point so the fat wouldn't turn to harmful substances at high temps., and that it is a healthy oil. So what is the truth? is sunflower bad or good? Since my girlfriend has already bought it i have to use it till it finishes. After that which oil should i buy?

coconut oil....look for it just like olive oil(extra virgin best). Very high in MCT's, and if thinking of a ketogenic diet this is a great way to raise metabolism and promote ketosis.

Sunflower oil is fine.
It is a combination of monounsaturated and polyunsaturated fats with low saturated fat levels.
Its frying performance(high smoke point) and health benefits are good.

I've heard that oils high in polyunsaturated fat can turn into free radicals or trans fats when heated...is there any truth behind this? ..
