I was wondering what the nutritional value of jerky was. I love jerky, so does the nutritional value of beef change when you dry it out. I figured the fat content would go down. Any info on this would be appreicated. sean.....

This type of food has a very high content of sodium. However, having some once in a while shouldn't hurt.

Hi ...
Looked up beef jerky in my Bowe's and Church's guide. Depending on the brand, jerky is 60 - 110 calories per serving with up to 9.9 grams of fat (4.2 of that saturated fats)! But only 3.0 - 8.0 grams of protein. The sodium content of jerky is also really high (max of 1370 mg).
Comparison: Two slices of cured bacon (grilled) is 87 cal, 11.4 grams protein and 4.0 grams fat (727 mg sodium).

Oops ... that shouldn't read cured bacon but "Canadian style."
Cured bacon has a bit less sodium, more fat and less protein.

WOW! I have no idea what kind of jerky you eat, but that seems a bit high on the fat content. Most jerky doesn't have that kind of fat. You may also want to try turkey jerky. It tastes a lot like beef jerky, but has close to no fat (2.5g per 6oz bag). Sure, all jerky has high sodium, but its not bad in moderation.
