I need some help in getting a quick meal in before my 1hr+ commute to my workout then work. I've got about 15 minutes to prep and eat before I'm on the road. Please don't ask for me to get up a little earlier because getting up @ 3:50 am is hard enough. Thanks for the suggestions!

I eat 5 egg whites + 1 whole egg and 1/2 cup of oatmeal every morning. It takes about 10 mins of prep and cooking time (i nuke both of them). If you can crack the eggs and mis them a night it will be even quicker.
3:50 must suck

I find breakfast the quickest and easiest meal to prepare. Throw some eggs into a pan and fry them up and eat with a whole wheat tortilla and salsa- I use egg substitute for convenience. Keep hard boiled eggs in the fridge for a really quick meal, you can also eat these as you go. have them with some pre-cooked canadian bacon-hubby's fav. Cottage cheese with berries is another quick one. How about peanut butter on whole wheat. I'm always chowing down while I prepare the kids lunches etc, never time to sit down:)

Thanks for the ideas. This helps me in adjusting to my newer lifestyle. Like the ideas and food mentioned. Yes, 3:50 is the time I go "Ugh", but I do feel better and meet the family needs in the evening.
