I do a homemade pasta sauce with chicken meatballs. You need: extra-lean ground chicken breast, mixed with egg white (2 whites per pound of meat), pepper, oregano, basil minced garlic and a few crushed whole-grain crackers to bind it all together. I cook them in the steamer before adding them to homeade sauce. (the steamer lets any fat off). After simmering for a few hours in tomato sauce, you can't tell they're low fat!

Actually, I would think baking would do the same thing as long as you have some sort of rack to put them on.
Good idea....what about ground turkey?

Damn I love Italian, omg. Problem is, pasta has so many carbs, albiet complex carbs so that's good. You guys are killing me here with the food. I'm so hungry right now!

With all of us weight trainers out here, I don't know how the chicken population isn't becoming extinct! I am waiting any day now for some environmental whacko group to come out and declare chickens an endangered species! LOL...

Yes the lasagna is excellent!!! I absolutely looooovvveeeee the spinach!! great source of iron for women!

IF you ever saw a see-saw...no wait a minute...actually if you ever saw how they..........kill chickens...and all.....OMG...we'd give up chicken.....OK - not GOING there...or did I already.
Too bad you can't just plant the friggen chicken and then pluck it....pick it...WHATEVER :o)

If you like cottage cheese on the pasta try it on the whole wheat bowtie pastas and put some crushed pine aplle in it as well!

They make a high protein pasta too if anyone is interested. A bit tougher than regular pasta, but pretty good, and covered with the right stuff anyway. I usually do a half and half.

Will have to get back to you on the name of it, dp. I am thinking Barillos or something like that right now. Escapes me. Something like 24 grms. protein per serving.

just wanted you to know we tried out your recipe last night and supplemented the cottage cheese for the paremsan cheese and it was great!! thanks for the recipe!

Yeah, chicken farming is some crazy stuff. They have to remove all their pecks otherwise they peck each other to death. They raise the chickens in these big barns with thousands of chickens in each, wing-to-wing. They have to have ventalation fans going constantly otherwise chickens start dying from suffocation since the oxygen in there gets used up so freakin' fast. Not to turn you guys off to chicken or anything . . . I heard all this stuff from a guy that saw it first hand and I still eat the stuff by the truck load.

I.m "chickening" out! Teasing. I just can never brave up to touch the gaggy thing. I have to get the debonned, deskinned breast. They are way too flippy floppy for me...and the stuff you find on it...disgusting!

I usually only eat boneless/skinless chicken breasts myself. Not as flippyfloppy. lol

I eat the organic or kosher chickens. Better tasting and no roids or heavy anti-biotics.
