Going through some old holiday recipes here and one of them requires a fair bit of mozzarella cheese. Just wondering if there's something else I could use in its place? Something bit healthier.

Here's the recipe I'm talking about. Nothing crazy actually, just a grilled cheese panini. Let me know what you think (healthy? not? changes?).
4 panini 4 Tbsp. pesto 1/2 lb (250 g) chicken breasts 'handful' basil leaves 1 C. mushrooms 2 pickled red peppers 1 C. mozzarella
Spread pesto on panini, fill with chicken, basil leaves, mushrooms, peppers, and mozzarella. Heat on grill until cheese is melted.
Pretty quick and simple to make when guests drop by.

Sounds good, get the low fat Mozzarella. Just as good, I use it all the time.

Mozza is gooey and mild because it has such a high percentage of fat. Try a harder, more flavorful cheese like provolone or romano. You'll get far better flavor, and take in far less fat.
