I have never really gotten the addiction to strength training and goin to the gym, so this is new territory for me.. here are my goals in order.. 1) build muscle mass in certain areas(so i can reshape my body), 2) build my cardio (so i can burn fat. 3) build my flexibility, and 4) begin mixed martial arts training.

because of a medical condition, my weight training will plateau once i can lift 75lbs (right now i can lift 35lbs 5-7 reps).

I am also a truck driver, so my weight program will consist of a dumbbell-only routine. and i have chosen running as my cardio platform while i am on the road. at home i will have a weight machine (likely a bowflex or something), a stationary bike, and a treadmill.

heres my workout schedule:
monday - cardio/weights
tuesday - off
wednesday - weights
thursday - off
friday - cardio/weights
saturday and sunday - off

any suggestions will be appreciated?

Perhaps you should setup an excercise and nutritional program here. If you are on weight restrictions from a Dr. be sure to get his/her ok before starting any excerise/weight routine.
In our office there are certain things we do not want you doing depending on the area of injury or the health problem.
Your routine is pretty vague to get much response. Are you doing full body workouts on your lifting days?
