I have a bit of a problem with my chest getting too big if I start lifting hard with it. I understand that higher reps with lower weight will help with definition but it seems like anything and everything seems to make my chest large but not as defined as I would like it. My lower chest seems to grow much faster than my upper chest as well which I think might be a result of benching 300 pounds back in high school when I was 175 (I'm about 160 now). Any tips would be appreciated.

To balance out the chest size, do incline bench presses for the upper chest.
What is not "defined" about your chest?

The edges, particularly the middle line in the center of my chest.

Higher reps lower weight is an old adage. It is a recipe for lean muscle loss. Diet is the key to definition. To define any part of your body, dropping bodyfat will so this, not higher reps and lower weight.

Lift heavy, focus on compound lifts coverin your whole body , and eat well....
