i love liver..especially calf liver...here is nutrition info on it...doesnt look too bad is their anything im overlooking as to why it wouldnt be too bad to incorporate into diet?

Here's an article I found that answers why it is good for you and at the same time sums up why a lot of people won't eat it. I don't think cholesterol is an issue since it is well known that it is the saturated fat in animal products that raises cholesterol in our blood and NOT dietary cholesterol. Some people are wary of liver because of it's toxin filtering properties (and why I stopped feeling guilty for NOT eating it after years of having my mother trying to trick me into eating it). May not be as much of a concern for calf vs. beef liver.
