sometimes instead of going for a 20-25 minute run i will do a workout that consists of 10 minutes skipping, 5 minutes rest, 10 minutes skipping. i was just wondering how this would compare to going for a run; better or worse?

you'll get a great workout skipping! Try and slowly decrease your rest time and add a 3rd interval, that way you'll always be challenging yourself. Doing a variety of things is always best so doing both running and skipping is great.
